It's almost impossible, upon first seeing Lake Louise, not to
gasp. The beautiful, milky blue lake rests at the foot of Victoria Glacier,
which rises majestically and suddenly behind it, capped by snow and ice
year-round. First sighted by Europeans in 1882, the lake has become one of
Canada's best-loved and most-visited resorts. The village that grew up around it
is reassuringly compact. Set on the lake itself, the Château Lake Louise, built
by the Canadian Pacific Railroad, is now the locus of shopping, dining, and
recreation on the upper slopes of the mountain. Farther below lies the Village
itself, which is composed mainly of resorts and the small Samson Mall. The
entire area offers a host of leisure opportunities, including skiing, hiking,
fishing, and biking. Moraine Lake is a short distance away and is perfect for a
day trip. As with most of the Rockies, the area affords incredible occasions for
sightseeing and photography.

DINING
In these mountains, each recipe for a
memorable meal starts with two simple ingredients - warmth and
hospitality. Our Executive Chef, Dominique Guyot has spent
years creating menus which reflect our truly unique Canadian heritage. Our spectacular dining
rooms are reminiscent of the Victorian era, where no expense was spared and
only the finest ingredients would please the discerning traveler. Outfitters,
cowboys and Swiss guides add color and a dash of spice to the Chateau's
specialty menus and offerings - from fondues to backpacker lunches.
Our philosophy is simple. To share with you, our
guest, a morsel of what it means to be Canadian, through our history, our
scenery and our culinary creations.
To get a first taste of our unique offerings, just browse
through the list below. Each of us in Food and Beverage is
looking forward to serving you soon. All you need to do is make a
reservation.
- Fairview
Dining Room: Towering mountains, glistening lake, sparkling
skies. The only views that could outshine the breathtaking vistas
from the Fairview Dining Room are its refined china, silver, crystal
and tapestry setting, or the simply elegant menu. Each dish stands out
from the page, celebrating the freshest treasures of North America's fields,
seas and rivers.
- Walliser Stube: Return from the splendor of the great outdoors to
the promise of an indulgent dinner. Old World traditions come to life
between rich wood-paneled walls punctuated by dramatic views and lively
conversation. Rustic loft ladders and heart-carved chairs yodel Alpine
charm. The tempting aromas of our signature fondues fill
the air. Unwind and enjoy this unique setting while sampling a classic Swiss
menu that generously embraces international accents. Linger over a glass of vintage
wine, a luscious dessert or fragrant specialty coffee. From the
first sip to the final moment, we promise an evening of simple
perfection. Reservations Required.
- Poppy
Brasserie: Early-risers who want
to kick-start a day of sightseeing, skiing or hiking, can catch the first
rays of morning light on the mountain peaks opposite the Poppy Brasserie's
expansive windows. You'll be greeted with offers of fresh orange
juice, coffee and tea, followed by a menu of gourmet choices. Or
dine like the hearty mountaineers who first ascended these towering peaks at
our generous Alpine Breakfast Buffet, with its wide
selection including eggs made to order, meats and cheeses, luscious
fruit, freshly baked breads and pastries. Later, drop by for a
leisurely lunch, an early dinner or just for dessert. The Poppy's à la
carte menu showcases many international specialties
including Italian-inspired Crostini Bruschetta with herb boursin cheese
and ripe olives and southern spiced Crab Cakes with an ancient mustard
remoulade. Main course choices also span the globe from a gooey
Croque Monsieur sandwich with crisp green salad to classic English-style
Fish and Chips. Be sure to save room for dessert - try the
decadent Chocolate Lava Cake.
- Lobby
Bar: One architectural element exemplifies why the
Chateau's Lobby Bar is so special. Seen through the room's signature
Palladian window, the awe-inspiring Victoria Glacier, surrounding Rocky
Mountain peaks, birds circling the forested slopes and dramatic sunsets. A
Canadian treasure of fine beverages, glorious views and classic
style, this perfectly situated nook is far more than just a place for
drinks. Certainly, the knowledgeable staff is quick to serve the
libation of your choice, whether your pleasure is a Bloody Mary, a modern
take on the Martini or a cherry-flavored Belgian beer - one
of a dozen tastefully varied imports available. But they are just as pleased
to brew a perfectly frothy cappuccino or decadent specialty coffee. Or
present a palate-pleasing glass of smooth red or crisp and
fruity white wine. A menu of innovative small bites and
indulgent sweet endings round out the Lobby Bar's extensive offering and
provide the perfect nibble.
- Glacier
Saloon: Swing through the doors of our Glacier Saloon for a
footloose and fancy-free journey to the wild west. The
friendly spirit of the legendary cowboy brands this casual
place to meet and mingle where you will feel equally
comfortable in jeans or elegant dinner suits and dresses. Sip a
cocktail, shoot a game of pool, sit back and listen to the music, even do
some dancing. Open from late afternoon to the wee hours for drinks,
easygoing pub meals, light snacks and nightcaps. In winter, enjoy
the après-ski action. Come summer, relax outside on the
Saloon's sunny patio.
- Chateau
Deli: Dash in - dash out - some days you just can't wait to
get going. Our Chateau Deli is open 24-hours-a-day. From
early breakfast to late-night snack there is always time to sit down and
relax, or get it to go. First thing in the morning or for a refresher
later in the day, ask for one of the specialty coffees like cappuccino
and café au lait, hot and creamy. Grab a mug to go, along with one of the
fresh muffins or cinnamon buns made daily by Executive Pastry Chef Peter
Boos. Or linger for a moment or two on one of the barstools and drink
in the historic photos of pioneers who went before you. If you're
headed out for a day of hiking, skiing, climbing or sightseeing, choose from
one of the fresh-made sandwiches or create your own from
fine European and Canadian meats and cheeses displayed behind the counter. The
Deli also serves up a wide variety of salads and hot dishes, like meat pies
and lasagna packaged to go or all ready for a quick meal
at our tables. For dessert anytime, let your mouth
water over the luscious cheesecake, Belgian chocolates, brownies,
tarts, strudel, and house special banana bread. Call ahead and
we'll have your backpacker lunch, stuffed with plenty of
gourmet goodies, ready for pick-up. Fast, fresh and made for every taste,
drop by the Chateau Deli anytime of the day or night.
- In-Room
Dining: Sometimes you just want to stay right where you
are. Take advantage of the ultimate in convenience and comfort with
the Chateau's In-Room Dining service. Perfect for early-risers, a
romantic dinner for two, night-time munchies, or for a small
gathering. You can choose from signature gourmet dishes,
hearty ''just like home'' selections, or even our ''Select Vineyard'' wine
program. Younger guests will enjoy our special children's menu
of favorites, and lots of them are finger-friendly.
- Victoria
Room: The Victoria Room proudly represents the
mountain and the queen it is named after: grand, classic and of
infinite surprise. Retreat to this oasis from a bygone era where
the brilliant blue of Lake Louise stretches out below. From the
table-to-ceiling windows you can look out on a lovely patchwork quilt
view of multi-colored flowers and strolling visitors. The interior
vistas in this European-styled ballroom are just as
fascinating as those outdoors. Dine surrounded by massive stone
fireplaces, glowing chandeliers and folksy alpine portraits at the end of
every beam. Imagine brunch buffet tables covered with
a lavish selection of hot and cold specialties - dishes like shrimp,
sirloin of beef and an entire garden of salads.
Reservations Required.
- Tom
Wilson Dining Room: Named after the first European to set
eyes on Lake Louise back in 1882, the Tom Wilson Dining Room fronts the
Chateau's 7th floor, showcasing a panoramic view of Lake
Louise. Open for dining only in the summer months, this intimate restaurant
recreates ''la dolce vita'' with a satisfying blend of innovative
and traditional Italian cuisine. Regional
dishes are accompanied by a carefully selected list of classic vino.
Clean lines, windowed walls and white linen are warmed by wicker and copper
decorations that bring the accents of Milano, Campagna, Fiorenze and Roma
into the Canadian wilderness. Come upstairs for an evening that is
both rustic and refined, rather like Tom Wilson himself. Reservations
Required.

Interpretive Hiking
The first
mountaineers in Canada were an eclectic group of adventurers. From
wealthy heirs and heiresses to staunch academics, people from all walks of
life were eager to unravel the mysteries of the great Rockies peaks.
From 1899 to 1954, professional Swiss mountain guides were employed by the
Chateau, making over 250 first ascents into these mountains, almost
always leading hotel guests. Today, you can relive the experiences
of those early adventurers through our 'Mountain Heritage'
guided Mountaineering and Interpretive Hiking Programs.
Our naturalist guide-in-residence and professional
mountain guides are delighted to share the nature, history and culture of this
magnificent place with you. Join one of them on a exhilarating trip
filled with the joys of discovery. Interpretive walks and hikes are
designed for all skill levels.
Sample Walks and Hikes:
The Lakes in the Clouds - a glittering waterfall and other
charms await you on our most popular journey
The Plain of Six Glaciers - surround yourself with the peaceful
grandeur of snow-capped peaks
Saddleback Pass - a fragrant forest, dramatic avalanche slopes and
flower-dotted alpine meadows
Mountaineering
Achieve the excitement of reaching new and exhilarating summits in
the company of the Chateau's certified guides. Discover stunning vistas
and breathtaking scenery as you journey to new heights. Participation in
our Mountaineering Program requires no previous experience, just an attitude
for adventure.

Where Eagles Soar - spectacular vistas and the thrill of reaching a
real summit
Rockies Highline - reach higher for distinctive glacier views
Journey to the Ice Age- a walk on the ancient ice of the lower
Victoria Glacier
Canoeing
The late Canadian Prime Minister Pierre Elliott Trudeau loved canoeing,
famously commenting that it makes you 'a child of nature.'' Become a
child yourself again (or bring the kids along) on a paddle across world-famous
Lake Louise. Life moves in perfect unison with the sights and sounds
of the wild as you guide your bright red canoe across our
brilliant blue-green waters toward the towering Victoria Glacier. No
previous experience required, our Sports Department will demonstrate
the skills first-timers need.
Horseback Riding
Brewster Barn, another Rocky Mountain tradition! Re-live the days
of the outfitter and his pack horse as you ride high above the
shores of Lake Louise on the trail to the Lake Agnes or
Plain of Six Glacier Tea House. Reservations are recommended. Available daily
during summer, weather permitting.
Mountain Biking
One of our local suppliers will provide all the gear you need to
explore the Rockies on a mountain bike. Mountain bike rentals are also
available at Wilson Sports in Lake Louise village.
Fishing
Cast your line and spend some relaxing hours fishing for lake
trout at Lake Minnewanka, located 45 minutes east of Lake Louise. Guided
fishing trips on a 22-ft. cabin cruiser are three hours in duration and
include all necessary equipment. Trips depart at 9:00 a.m., 1:00 p.m. and 5:00
p.m. A National Parks fishing permit is required and can be purchased for a
nominal fee at the Lake Minnewanka office.

Strap on a pair of snowshoes and whisper through the forest on this
ancient and remarkably easy-to-learn mode of transportation. Our Mountain
Heritage Guides will teach you how to search for tracks and
explain how animals cope and thrive in this frosty world.
Want to get out in the woods after dark? Guided night-time snowshoe
walks are a great way to discover the forest's secret spots. Winter attire,
including a warm coat, boots, gloves and hat, is necessary.
Johnston Canyon Ice Walk
Join one of our Mountain Heritage guides to get up close and
personal with a mysterious frozen world. Discover stilled waterfalls and
pillars of blue ice while exploring the magic of this 'crystal palace.'
This unique excursion will take you along the bottom of the canyon,
past the Lower Falls and over suspended catwalks to the Twin Pools and Upper
Falls. Reservations are required through the Concierge.
Transportation to Johnston Canyon is included, although guests may choose to
take their own vehicle and meet their Chateau guide at the canyon.
''Heavenly Bodies'' Stargazing
''Starry, Starry Night'' comes alive on this stroll through the winter
evening woods. Study maps of the cosmos, then use telescopes
and binoculars to find out what's in the stars for you, perhaps Orion's Belt
or the Moons of Jupiter. Your astronomer-naturalist guide
will connect these visions of the night sky with ancient mountain
legends. Contact the Concierge desk for times and details.
Evening Legends
'These mountains have their secret legends.' Join our Naturalist
Guide-in-Residence in a quiet corner of the Chateau as he shares
those stories and more.
These evening conversations about nature,
our history and the people who shaped it include informative
presentations and plenty of opportunities to ask questions. So, for an
unforgettable night, come join people who are as intrigued by these
mountains as you are. Please contact the Concierge desk for more
details.
Dog Sledding
Never been mushing over the snow? Enjoy the opportunity
to race in an authentic Inuit sled pulled by purebred Huskies.
Your musher sled guide shouts ''Go,'' and your dogs are off scampering over
the pure white snow. With the fresh air on your face and the Rockies
soaring skyward ahead, you'll soon feel like the boldest of northern
explorers.
Then, with your cheeks pink and sense of adventure complete, you can head back
